Instructions

Soak the lentils for 2 hours or overnight.

  1. Finely chop the onion and tomato.
  2. Drain the lentils and sauté them in a large pot with the onion, tomato, and olive oil until the onion is translucent.
  3. Add the bay leaves, salt, pepper, tomato paste, and 250 ml of water; then, bring to a boil.
  4. Simmer uncovered for 15 minutes, ensuring there is enough liquid for the stew to keep producing steam.

Serve with a few cilantro leaves on top.
